I’ve chosen a great week to join a weight loss group! Off to Dublin tonight, Galway tomorrow and its my birthday on Sunday! Nothing like a challenge.
I’ve decided that although I do eat quite healthily I need to have the group side of things if I actually want to loose a bit of weight. So Sarah’s Fab-U-Less is where I’ve decided to go. I know Sarah from before and she is such a fun and encouraging leader.
The meetings are on Wednesday which suits me well as my weekends are generally busy. Its great to have the Facebook group too where you can share ideas and help each other between each weekly meet. Somebody always comes up with something you may not have thought of.
To keep myself on track I decided to make a few things to take with me to eat on the road. Petrol station sandwiches are not part of my plan. I’m bringing some fruit, some chopped carrots and homemade hummus and I’ve made some healthy banana oat muffins with a little dark chocolate.
This recipe makes 6 muffins. You would have 3 as a portion or just one as a snack, but trying to keep your hand off the rest will be a challenge!
Banana Chocolate Oat Muffins
80g porridge oats
1 ripe banana
100g 0%fat vanilla Greek style Yoghurt
Tablespoon maple syrup
1tsp vanilla extract
1/2tsp baking powder
1/4tsp bicarbonate soda
12.5g 85% dark chocolate broken into little pieces
Preheat oven to 200°c.
Mix all ingredients together.
Divide mixture between 6 silicone muffin cases or spray a muffin tin and add mixture to that.
Put into preheated oven for 20 mins.
Remove from oven and try to resist munching them all straight away, wait 10 mins, enjoy warm or store in an airtight container for up to a week.
