Carrot Cake Baked Oats

I haven’t posted a recipe for a while and thought as today (3rd February) is “Carrot Cake Day” that it would be the appropriate time to post my carrot cake baked oats recipe. I tried a couple of different versions of this and have come up with what is my favourite.

I do love baked oats. They feel a little like eating cake for breakfast (or an evening warm treat). However, no matter what way I make normal porridge -on milk or water, topped with fruit, nuts, honey cinnamon or whatever, I just cant get a taste for it. So baked oats it is!

I first discovered baked oats when doing Slimming World and had to chop and change the recipes they gave to suit me. What I am showing you here is not syn free like the ones SW would give you but I have a major dislike of artificial sweeteners and muller lights, I simply can’t eat them because of the taste, never mind what you read about how bad they are for you. I think this is quite a healthy recipe as it is and tastes a little naughty!

Carrot Cake Baked Oats

Ingredients

40g porridge oats

100g 0% fat greek style vanilla yoghurt

1 egg

1 medium finely grated carrot

1/2 teaspoon cinnamon

1/2 teaspoon mixed spice

1/2 teaspoon ground ginger

1-2 teaspoon Maple Syrup

1/2 teaspoon Vanilla Extract

couple of chopped walnuts

spray oil

another 50-100g 0% fat  greek style vanilla yoghurt to put on top

Method

Preheat oven to 190/200°c

Mix the oats with 100g yoghurt, egg, maple syrup, vanilla extract, grated carrot and spices

Spray ramekin with spray oil

Fill with mixture, sprinkle some spices on top

Put in oven for 20-30 mins

Top with more 0% fat Vanilla Greek Style Yoghurt
