Spicy Coated Baked Chicken Dippers

Its been a few days since I posted here. I sometimes put smaller posts on my Facebook and Instagram that I don’t think are worthy of a full blog post. Feel free to follow me on them if you like, it would be great to have you join me there.

This is only a quick post too as Monday is usually my day off after a busy weekend. But this recipe is something I have been thinking of trying since I discovered Broghies. It is definitely one I’ll be trying again. It could be made with different spices to create different flavours. I think I might try the coating or something similar on chicken thighs and drumsticks and have them with homemade chips to make a lighter version of a good old Irish takeaway favourite the “Snack Box”. (like KFC fried chicken)

This is my first attempt at this and I used what spices I had to hand. (I ran out of paprika, had no cayenne pepper or garlic salt -time to go to the shop!) I used 3 Broghies but I’d recommend using 4 to get a better coating on the chicken.

Spicy Coated Baked Chicken Dippers

serves 2

3 or 4 Broghies

1tsp chilli powder

1tsp oregano

1tsp chilli flakes

2tsp chopped garlic

plenty of salt and pepper

1 egg

300g chicken breast

Preheat oven to 180℃.

Blitz the Broghies to make a fine crumb.

Add the spices, garlic and a good bit of ground salt and pepper to the crumbs. Mix.

Cut the chicken into small strips.

Beat the egg.

Dip the chicken into the egg first then into the crumbs and place on a baking tray sprayed with spray oil.

Put into oven and cook at 180℃ for 20 mins.

Check the chicken is cooked through with no pink left.

Serve with a dip of your choice.
