Theres nothing like cutting into a perfectly ripe avocado. That beautiful creamy green fruit gives me more happiness than it should. However they can let you down way too often. Under-ripe, over-ripe, giant stone and barely any flesh, it can put a stop to your plans of a super breakfast or lunch. But get the right one and all is good.
I’m happy to say today I got a good’un! So I made this highly nutritious brekkie.
A bit about the ingredients: Avocado is high in healthy fats, high in fibre, low in carbs and helps absorb antioxidants from other foods. They are packed full of vitamins and minerals and make you feel fuller for longer. Eggs are an excellent source of protein, (so tempted to write eggcellent!) and contain essential amino acids. Chilli flakes are said to help stimulate metabolism and prevent fat storage and are rich in antioxidants and contain a good dose of vitamin A, that helps keep your immune system healthy. Broghies are fat free, sugar free, preservative free and only 19cals. Microgreens contain between 4 to 40 times higher levels of vital nutrients than their mature counterparts.
Sounds like the perfect breakfast!
Smashed Egg and Avocado
1/2 an avocado
1/4 tsp Chilli flakes
Salt and Pepper
Boil the egg until its custardy yet firm. See link.
Allow egg to cool slightly. Peel and add to a bowl.
Peel and remove stone from the avocado, you’re only using half so cover and store the other half, scoop flesh into the bowl with the egg.
Take a fork and smash the egg and avocado and mix together gently. Add chilli flakes and season with salt and pepper.
Pop mixture onto the Broghie and top with a few microgreens.
